Ice Lollies

Approx ½ lb of fruit of your choice (raspberries, blackberries, strawberries work well as do plums and peaches)
Water
Sugar* (optional)

Method

Place the washed fruit in a pan.
Cover the fruit with water.
Slowly bring to the boil then simmer gently until fruit is tender.
Remove pan from heat and stir in sugar to taste.
Pour through a sieve into a measuring jug discarding the pulp.
Top up the juice with the same amount of cold water and allow to completely cool.

If your child is particularly sensitive to sugar then you can omit the sugar.

When the mixture is cool pour into mould and place overnight in a freezer.
