4oz/125g butter
6oz/175g caster sugar
1 egg beaten
6oz/175g of self- raising flour
3oz/75g of desiccated coconut
Method
Cream butter until soft then add the sugar and beat until light and fluffy.
Add the egg and beat thoroughly.
Add half of the coconut and the flour and stir until mixed.
Form into small balls the size of walnuts and roll them in the remaining coconut.
Place slightly apart on greased baking sheets and flatten them with a fork.
Bake in a preheated oven 190 c or 375 f gas mark 5 for 10 – 15 minutes until lightly golden.
Allow to cool slightly before transferring to a wire rack to cool completely.
