6 ¼ oz (180g) plain flour
2 ¼ oz (60g) sugar
2 teaspoons baking powder
¼ teaspoon salt
2 eggs
2 oz (55g) melted butter
6 fl oz (175ml) milk
1 teaspoon vanilla essence* (optional)
1 teaspoon grated lemon rind
6 oz blueberries (can use raspberries, dried apricot, or other fruit)
Method
Sift the flour, sugar, baking powder and salt into a bowl.
In another bowl beat the eggs, add melted butter, milk, vanilla (if used) and lemon rind.
Stir and combine ingredients.
Add the mixture to the dry ingredients and stir gently.
Fold in the blueberries.
Spoon the mixture into muffin cases.
Place in pre-heated oven 400 f 200 c or gas mark 6 for 20-25 minutes until golden.
Leave to cool.
